Fresh Strawberry Pie

1 (9 inch) pie shell baked
2 pounds strawberries
1 cup granulated sugar
2 tablespoons cornstarch
1 cup water
1 (3 oz.) package strawberry flavored gelatin
1/2 package cream cheese, softened
2 cups cool whip

In a small pan, mix together the sugar and corn starch. Make sure to blend the corn starch in completely or you will have lumps in your filling.  Add the water and stir well and cook over medium heat until mixture thickens and begins to boil.  Stir constantly.  Remove from heat and add the gelatin, stir until smooth.  Let the mixture cool to room temperature.

Mix the cream cheese and cool whip together thoroughly and spread on bottom of the pie crust. Layer the strawberries and filling in the baked pie shell.  Make three layers of each.  Refrigerate until set. Serve with whipped cream if desired.
