Chicken Salad Sandwich


CHICKEN SALAD SANDWICH
Boudin Bakery Restaurant Copycat Recipe

1 1/2 cups cubed chicken breast 
1/2 cup celery diced
1/2 cup grapes halved or quartered 
1/4 cup scallions
1/4 cup sliced almonds
2 tablespoons Dijon mustard
2 tablespoons mayonnaise

Prep ingredients. Toss all ingredients together, with salt & pepper to taste. Spread mixture onto sourdough bread Top with romaine lettuce. Makes about 4 servings.
