Bistro Salad

Einstein Brothers Bagels Recipe

2 teaspoons Dijon mustard
2 teaspoons minced shallots
1/4 teaspoon minced garlic
1/4 cup sugar
1/8 teaspoon black pepper, freshly ground
1/4 teaspoon salt
1/2 cup olive oil
1/4 cup raspberry vinegar

1 head romaine lettuce, torn into bite sized pieces 
2 cups mesclun or spring lettuce mix 
1 cup radicchio leaves in bite sized pieces 
1/2 cup Gorgonzola cheese, crumbled

Sugared Walnuts 
2 cups walnuts 
4 tablespoons peanut oil 
3/4 cup powdered sugar 
1 teaspoon salt 
1/4 teaspoon cayenne pepper

Preparation for Dressing: Place all ingredients except the vinegar and olive oil into a mixing bowl. Add vinegar until the sugar dissolves.  While stirring with a fork or wire whip, slowly drizzle oil into mixture.  Stir until totally emulsified.

Preparation for Salad: Wash greens and dry thoroughly. Toss greens together in a large salad bowl.  Add 1 cup of dressing until all salad greens are slightly wet. Fluff salad in center of bowl. Sprinkle gorgonzola crumbles over salad. Sprinkle 1/4 cup nuts over gorgonzola.

Preparation for Sugared Walnuts: Blend together peanut oil, powdered sugar, salt and cayenne pepper.  Add walnuts. Stir.  Bake in a 400 degree oven for 15 minutes.  Stir once. 

Note: Store unused portion in a sealed container.
